The Story Behind Our 1931 Dining Room

Esthiō, Athens

Esthiō lives inside a 1931 neo-classical house a short walk from the Acropolis. When we found it, the building had been divided, painted over, and half-forgotten. Restoring it became part of defining what the restaurant would be.

Keeping the Bones

We chose to preserve rather than replace. The original plaster mouldings, the worn marble thresholds, the tall shuttered windows — all stayed. New elements were kept deliberately quiet so the architecture could remain the loudest voice in the room.

Light as an Ingredient

The dining room was designed around the Athenian light. In the afternoon it falls long and warm across the tables; by evening, candlelight takes over and the space contracts to something intimate. We think of that shift as part of the meal — a course you experience without tasting.
