Some of the most quietly ambitious plates at Esthiō started as home cooking. They are the dishes Chef Zyba grew up eating — and the ones the kitchen treats with the most care, because they are the easiest to get wrong.
What to Change, What to Keep
Reimagining a family recipe is an exercise in editing, not rewriting. We keep the flavour memory intact and refine only the technique — a cleaner stock, a more precise sear, a lighter hand with the richness. If a regular guest from the old neighbourhood would still recognise it, we have done our job.
Heritage on the Plate
These dishes anchor the menu. Around them we build seasonal courses and modern touches, but the family recipes remain the centre of gravity — proof that refinement and nostalgia are not opposites, and that the most personal cooking often travels the furthest.
