Balkan flavours in playful recipes
NouPou highlighted Esthiō’s playful approach, where chef Elvi-Dimitris Zyba reinterprets traditional Balkan dishes — frequently swapping meat for fish to lighten and brighten familiar plates.
A good example is the Albanian gjellë me arra, classically made with chicken or beef, which here is prepared with scorpionfish, served alongside the now-signature yogurt-tavás with lamb sweetbreads.
Other highlights include an octopus pie folded into handmade pastry and marinated shrimp with tomato and galéni cheese, paired with a list built on Greek wines.
